...compared to our first restaurant, Little Giant. In fact next to Little Giant, Tipsy Parson is downright BIG! Building a bigger restaurant from scratch means we'll have more of everything, and not just space! more excitement, more anticipation, and a lot more freedom to start.
But if we learned anything back in 2004 when we opened our first restaurant, it's that we should also expect some BIG delays, set-backs and disappointments. It wouldn't be a New York City restaurant opening without them, I guess. We will try to chronicle it all here, in our blog, for you to read about.
